[MUSIC] Hey, Professor Wang. So I read somewhere that their are eight different Chinese cuisines. Is that true? >> Yes, that's true. >> And which one is your favorite? >> I think I like all of them. But usually people consider the Sichuan food and Cantonese food enjoys the biggest international fame. >> Okay, I think I know those ones. There are Mapo tofu and roast goose? >> Yes. >> But I also read that in northern China they eat more noodles and dumplings. And the south of China they eat more rice, is that true? >> Yeah, that's true. because in the north wheat is cheaper and more widely planted, while in the south rice is more widely planted. >> And I also realized that, well, as my stay in China got longer, that they eat more pork than beef. >> Yeah, that's a very good that you noticed that. That's because in ancient China, it's illegal to consume beef. >> Okay, why is that? >> Maybe because people consider the farming animals sacred. So therefore beef is only used for the highest ritual? >> Okay, well, where I'm from we seldom eat duck. But we eat more beef than duck, yeah. >> So why is that? >> Well it's basically because people find duck more difficult to cook. And they think it's cute. >> You must be kidding me. >> No. I mean think of the Disney character Donald Duck. People see Donald Duck and they think all he is cute. We can't eat Donald Duck. Yeah you get what I mean. [SOUND]
